This delicious Peppermint Yogurt Bark is layered with dark chocolate, a mixture of Greek yogurt and elderberry syrup and crushed peppermint candy canes. It takes minutes to whip up with four simple ingredients and an hour in the freezer until you’re nibbling on complete holiday bliss!

Peppermint bark is one of my FAVORITE holiday season treats. I used to buy big containers and put them out in bowls around the house. Not only do they look incredibly festive, but they are sooo good. It’s one of those foods where you don’t realize how much you’ve eaten until the bowl is empty, ha!

My family has been on such a health journey, especially these last few years. I’m learning so much and have been making small changes here and there. Looking at us now, I can see how far we’ve really come. It’s exciting!

Well, here’s the point I’m getting at…

Have you checked out the ingredient label on peppermint bark from your local store? 

Because I did. And yikes!

The list was a mile long, and I couldn’t pronounce more than half the ingredients. That’s scary, in my opinion. What was worse? There was no ACTUAL peppermint (mind-blown). How was this even possible? Oh… artificial colors and flavorings, that’s how. 

So, I tossed the container in the trash and started doing a bit of digging on the internet to find a healthier alternative.

Four Simple Ingredients

As I read through recipe after recipe, I realized pretty quickly that this yogurt bark doesn’t need to be complicated to be mouthwatering and delicious. In fact, as I started to test a few recipes and tweak them a bit to suit my tastes… I realized that the simpler it was, the better it tasted.

Here’s something about me you might know… I like things to be in order. I like the kitchen counters tidy (as much as they can be after my boys whirl through there like a tornado), my bed made every morning and the minimalist style. Well kinda. Too plain, no thanks. Simple with just a sprinkle of color… yes, please!

Ingredients for Peppermint Yogurt Bark

Just as I’ve stated above, you’ll only need four simple ingredients for this delicious melt-in-your-mouth bark recipe.

Here’s what you’ll need:

  • 2 cups of Dark Chocolate Chips
  • 20-24 oz container of Plain Greek Yogurt
  • ⅓ cup of Organic Elderberry Syrup
  • 1 box of YumEarth Candy Canes

A little note on which chocolate chips to buy for a truly healthy and nourishing treat: try to avoid anything with added seed oils or other weird ingredients. Seed oils are full of inflammatory properties and highly processed.

My favorite brands of dark chocolate chips include Enjoy Life, Lily’s and Hu. All three are easily found in grocery stores and even Target.

Now it’s time to whip these bad boys up!

How to Make Peppermint Yogurt Bark

This recipe takes just a few minutes to assemble and then some time in the freezer. Easy, peasy.

Here’s how to make this yummy yogurt bark:

STEP 1: Line a 9x13 baking pan with parchment paper.

STEP 2: Melt the chocolate using either the double boiler method or your microwave. If using the microwave, melt for 30 seconds then stir. Then microwave for another 30 seconds and stir. Continue this until the chocolate is fully melted. Pour over parchment paper and allow it to harden completely before moving on.

STEP 3: In a bowl, combine the yogurt and elderberry syrup. Whisk until smooth and combined. Pour your yogurt and elderberry mixture onto the chocolate layer (after it’s hardened) and smoothen it with a spatula.

STEP 4: Using a can, crush unwrapped candy canes in a large Ziplock bag. Sprinkle on top of the yogurt mixture.

STEP 5: Freeze for at least 2 hours.

STEP 6: Take out of the freezer and either cut or break the bark into pieces. 

Now it’s time to indulge!

Pop it back into the freezer, ensuring it sits flat to maintain its tempting texture. If you have a sizable batch, layering parchment paper between the pieces prevents sticking. 

Oh, and here's a tip: placing the container in the coldest part of your freezer ensures it stays perfectly firm.
