This Lemon Elderberry Poke Cake is made with a healthy vanilla cake mix doctored up with lemon zest. Then, it’s covered in elderberry sauce and topped with a sinful whipped cream topping and fresh berries. Yum!
2. Sheet Pan Pancakes
Sheet Pan Pancakes are ridiculously easy. They make standing over your stove forever just to make one plate full of pancakes a memory of the past.
All you have to do is whip up the batter, pour it into your greased sheet pan, sprinkle some chocolate chips (or any other add-ins you prefer) and bake. Once golden, pull the pan out of the oven, cut it into squares, and top it with maple syrup (preferably elderberry maple syrup) and anything else your heart desires.

The best part about this recipe? It’s only sweetened with a touch of honey and no added sugar — just like my organic elderberry syrup.

This is my go-to on nights when I don’t feel like being in the kitchen forever. I typically make it whenever I have leftover grilled or shredded chicken. But don’t worry, even if you aren’t starting with leftovers, this is a super easy dinner.

This delicious salad features grilled chicken, arugula, soft-sliced pears, feta cheese, walnuts and a simple elderberry vinaigrette. Your taste buds will go crazy for this combination.
The recipe is SO versatile — if you don’t like arugula, feel free to switch it for greens you favor. Not a fan of walnuts? Swap them for pine nuts or pecans. Would you prefer goat cheese over feta? Go ahead! The choice is yours!
