Summer is finally here! The warm sun, water balloons, beach vacations, BBQs… and popsicles! If your kiddos are anything like mine, they eat a ton of popsicles. We go through them crazy fast. 

It can be tempting to grab popsicles ready to go from the store, but they’re full of added sugar, artificial flavors, artificial colors, and high fructose corn syrup. But not these popsicles!

My motto is – the simpler, the better! To be honest, these recipes are always tastier than anything you can find in the freezer section. The kids are always coming back for more. 

Let’s take a treat that these summer-crazed kiddos adore and nourish their bodies at the same time. 

These Elderberry Popsicles are way healthier than your average pop. They’re made with natural and simple ingredients. 

With three recipes to choose from – make them fruity, creamy, or loaded with greens – whatever your heart desires. Keep the freezer stocked with these, and you’ll be sure to have big sticky smiles along with strong and immune-boosted bodies.  

💜 Basics of Home-made Popsicle Making

Making homemade popsicles are a great way for kids to have fun in the kitchen with their parents and siblings. 

Before you start this fun adventure of popsicle making, make sure you have a few good molds. 

There are all kinds of different types out there. Our family really loves PopsicleLab’s Silicone Popsicle Molds. These complete sets are BPA-free and come with all the accessories to make popsicle making a breeze. Clean up, too – everything is dishwasher safe. Score!

If you prefer stainless steel over silicone, give Onyx POP004 Stainless Steel Popsicle Mold a try. It’s a bit pricier but it’s eco-friendly, BPA-free, and honestly – will last you a lifetime. 

RECIPE #1: How To Make Fruity Elderberry Popsicles 🍉

This is the simplest and easiest popsicle to make, I promise! You only need two ingredients — elderberry syrup and 100% organic juice of your choice. Be sure to read the ingredients list and skip out on any added sugar or preservatives.

DIRECTIONS: Add organic elderberry syrup to each popsicle mold, and then fill each mold with juice. 

Use your popsicle stick to give it a mix and pop them in the freezer. Freeze for several hours or until completely frozen.

RECIPE #2: How To Make Creamy Elderberry Popsicles 🥥

My secret ingredient for the creamiest and smoothest popsicles? Full-fat coconut milk! They turn out soft, velvety, and oh so dreamy! 

This is either a 2 or 3 ingredient recipe. The choice is yours.

DIRECTIONS: Toss organic elderberry syrup and one can of full-fat coconut milk into your blender. Blend away and pour into your popsicle molds. For an added boost in gut health, cut back ¼ cup of coconut milk and replace it with kefir.

Freeze for 3-4 hours, and BAM! Best summer treat ever! Creamy, nutritious, and absolutely delicious!

RECIPE #3: How To Make Hidden Veggie Elderberry Popsicles 🥬

 It’s undeniable that veggies are super important for you and your little ones. It’s also no surprise that most of our kiddos prefer the sweetness of fruit over their vegetables. If you’re anything like me — you’re always trying to find ways to sneak more into their diet. 

Since popsicles are a staple in our home during summertime, I thought — why not sneak some in there too? 🤷🏻‍♀️

You can add a handful of spinach or kale to any smoothie recipe, right? Well… let’s turn that smoothie into popsicles by pouring it into molds and freezing. Easy peasy.

DIRECTIONS: My favorite recipe is blending spinach, banana, and frozen strawberries, organic elderberry syrup and coconut or almond milk. Drizzle in more milk as needed until it has a nice smooth but thick consistency.

Now — they’re getting in their greens while enjoying their favorite summer treat. Celebrate mommas — that’s a win in my book. 🎉

Quick Tips for Easy Breezy Popsicle Making

  • To easily release your popsicles from the mold, run under hot water for a few seconds. They should pop out beautifully.
  • Add sliced fruit to any of these recipes for even more of a  nutrient-boosting treat.
  • No mold? No worries! You can use muffin tins, shot glasses, and even plastic disposable cups. To keep your popsicle sticks upright, simply cover your popsicles with foil, then poke your sticks through, and it’ll do the trick.
