I have six males in this house, and I have zero time to be in the kitchen for hours for one pan of cinnamon rolls.

Ingredients for Cinnamon Roll Coffee Cake

For the batter:

  • 1½ cups Bob’s Red Mill Gluten-Free Baking Flour (can sub 1:1 with regular or whole-wheat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • ½ cup maple or coconut sugar
  • 3/4 cup plain Greek yogurt (we love Siggis)
  • 2 large eggs
  • ½ cup milk

For the filling: 

  • ⅔ cup maple or coconut sugar
  • 2 tablespoons ground cinnamon
  • 5 tablespoons unsalted butter, melted

For the glaze:

  • ¼ cup powdered sugar
  • 2 teaspoons milk (any variety)

These are healthy, nourishing ingredients for a blissful cinnamon roll-filled morning (in coffee cake form, of course).

How to Make This Coffee Cake

Before getting started, preheat your oven to 375℉.

 

​​1. Make the batter: Combine the dry ingredients in a bowl. In a separate bowl, combine the wet ingredients. Add the dry ingredients to the wet ingredients and stir until combined into a thick batter.

 

2. Pour half the batter into the pan: Pour half the batter into a greased 9-inch springform pan or cake pan. Use a spatula to spread evenly.

 

3. Make the cinnamon roll filling: In a small bowl, combine the brown sugar, cinnamon and melted butter. Then, pour about half of the filling over top of the batter in the pan. Spread it out evenly. This is when I’d sprinkle pecans, walnuts or your choice of nuts if you prefer to add that in! 

 

4. Add the remaining batter: Pour the rest of the coffee cake batter over the filling layer and smooth it out evenly.

 

5. Make the swirl: Add the rest of the cinnamon roll filling in a circular swirl pattern over top of the batter, starting at the center and working outward. This will help your cinnamon roll coffee cake look like one giant cinnamon roll when it comes out of the oven.

6. Bake the coffee cake: Bake at 375℉ for 35-40 minutes. When an inserted toothpick in the middle comes out clean, it’s done. Remove the pan from the oven and let the cake cool slightly.

7. Add the glaze: Remove the cake from the pan it was baked in, then combine the powdered sugar and milk in a small bowl. Drizzle the sweet glaze over the cake or individual slices just before serving.
