This BBQ chicken flatbread pizza is full of flavor with our elderberry bbq sauce, moist chicken, cheese, red onion and cilantro.
Talk about a quick and easy meal!
This is my go-to on nights when I don’t feel like being in the kitchen forever. I typically make it whenever I have leftover grilled or shredded chicken. But don’t worry, even if you aren’t starting with leftovers… this is a super easy dinner.
But what’s the difference between traditional pizza dough and flatbread pizza?
Well, pizza dough is made with yeast so it rises. This is why it’s thicker and fluffier than a traditional flatbread.
Flatbread pizza is made without yeast, so it doesn’t rise. It stays thin and because it’s thinner, it gets a little more crispy when baked. I’m personally a fan of flatbread. Sometimes I feel more full from the bread than the actual toppings when it comes to pizza. I’d rather get more chicken, onions, and flavor - don’t you agree?
Don’t get me wrong. I’ll always love pizza. But flatbread pizza wins over traditional pizza every day for me.

Quick Tips & Reminders:
This recipe makes two flatbreads: Scale it to feed a crowd or cut it in half if you’re cooking for one. When I’m cooking just for me on the rare occasion that everyone’s out of the house, I still make two. I always end up being hungrier than I originally thought once I get a bite of this pizza. Yum!
Don’t heap the toppings: Too many toppings make this pizza flop when you pick up a slice. Remember, it’s not the same dough as pizza dough. It’s thinner and crispier.
The best way to reheat this flatbread pizza: Pop it in the microwave for 1-2 minutes or reheat it in your oven at 250F for 20 minutes. Sometimes heating it up in the oven can cause it to get a little harder though. So keep that in mind and take it out as soon as it’s warm.
